His resume boasts positions as Sous Chef and Chef de Partie at Commander’s Palace, and Executive Chef roles at notable establishments like the National WWII Museum’s American Sector and Dickie Brennan’s Bourbon House. This extensive background has solidified his position as a leading figure in the New Orleans food scene.

Beyond the kitchen, Chef Cook has garnered national attention through appearances on popular television shows such as Gordon Ramsay’s: Uncharted, Top Chef New Orleans, and After Hours with Daniel Boulud. His culinary artistry has also been recognized in prominent publications like Saveur, Plate Magazine, and Louisiana Cookin’. Further accolades include representing New Orleans at the James Beard House and winning the National Chef’s Taste Challenge. His barbecue team, “Born to Grill,” even claimed the Whole Hog Champion title at Hogs for the Cause.

Before Saint John, Cook established Gris-Gris on Magazine Street, celebrated as one of New Orleans’ best neighborhood restaurants, showcasing refined Southern cuisine. Gris-Gris earned accolades such as Eater New Orleans’ Reader’s Choice for Restaurant of the Year and Gambit and New Orleans Magazine’s “Best Brunch,” among others, setting the stage for his next venture, Saint John.
